I agree, go with the flow, wing it and be surprised. You may find an afternoon/evening is more than enough to explore, so keep the spare days for when your body/mind asks for it.
Leon was my favourite - the main albergue is an old monastery and the old town of Leon is really interesting and full of life. But will it or any other place keep you entertained on your arrival day and all of the next day?
I thought I should post an update to my plans, which have gone through a lot of changes because of Covid rules changes, and also because I don't want to build a bike box in Santiago. If anyone has some feedback, things I should be aware of, etc I'm more than happy to hear:

Awesome, you're going to love it! My two pence: take it easy on the first week, and keep a close eye on your feet, the second you see the possibility of a blister, add a pea-size amount of Bepanthen to the area (lubrication), and cover it with a makeup cotton pad (protection and cushioning).
Michelle/didi2L Thanks for letting me know, this is good information, a dozen people a day is very quiet, so what I'll probably do is wing it until I get to the outskirts of Galicia, and from then on I'll book ahead.
