To add to my previous post, as I'm now in Santiago, the last 100 kms is definitely busy. There's also a festival in Santiago this coming weekend which doesn't help accomodations.
I did the Camino Frances in 2015 and am back now, started in Bayonne mid May... walked to St Jean and have been walking 25 days, just got to Sarria.
It feels like there are a good 10-20% less pilgrims than when I did it in 2015. It's tough to say because some albergues (apparently) removed beds...
If you stretch it a few days you can start in Leon and walk about 220 KMs into Santiago.
I was going to do this with my fiance but her passport will be delayed too long due to our slow government.

There are weirdos like me who have a few of our favorite places booked but will let others stay with us if someone were to chip in. Not a lot of places but I have 4 or 5 along my way.
LOL I knew it would be. Had to push my trip to this year from 2020 and I sighed when the church made this the holy year. I'm starting in a couple of weeks and it's gonna be wild.
Wow that is interesting! Though I was doing the CI near the end of October so perhaps it was the timing? But it was much much much different for me than the CF in May/June.
If you are all fit it's very doable. In 2015 I did Saint Jean to Santiago from May 16th - June 15th and I took 3 days off in that time (1 in Lagrono and 2 in Leon). I averaged over 25 KM's/day but in the middle it's all very flat and farm like for about 3 weeks.

I am desperately trying to avoid your photos lol but the advice is wonderful. Excited to start my Camino from Bayonne and I am hoping to find a new scallop shell there.
The only albergues I stayed at where I was truly concerned with my sanity were in Larassona (Municipal?) and Najera (definitely church run and by donation).
But honestly wouldn't trade those experiences for anything.
