Train from Chamartin Station in Madrid to Ferrol is pretty easy.
There should be a good amount of pilgrims in July to get the true Camino feel. Buen Camino.

If you are hiking 10+ miles a day, you shouldn't have any issues from Sarria.
You can take a train directly from Madrid Airport (Terminal 4) to Chamartin Train Station. There are free shuttles to take you to T4 from wherever you land.

I did the last 100k in February of 2016. It was very wet, but still my favorite time on the Camino. Another option could be a direct train from Madrid - Sarria. Buen Camino!
I've made several pandemic related changes to my original flight reservations and so far it's been very painless. I've gone from March 2020 to October 2020 to February 2021 and hopefully finally October 2021.
I'm hoping to be back at it this October. If travel restrictions allow, I will have a free week in Spain at the beginning of October. Looking at arriving in Sarria on the 5th and starting my short Camino on the 6th. Hope to see a lot of people out there!
I agree with the advice above regarding taking the bus. Several buses everyday from Pamplona to San Sebastian. And both bus stations are located in easy locations to get to.

Camino Baztan is an option. Start in France and finish in Pamplona, Spain. You get to practice both languages and get your fill of the Pyrenees.
From pamplona it's easy to catch a train or bus to Madrid, or even make a stop along the way to explore for a night or two.
