2 hours is simply not enough to do the two flights. Any delay at all well prevent you from making the connection. Believe me I experienced this and had to fly to Biarritz the next day. There is a train from the airport to Biarritz changing in Bordeaux that might work. I would buy a later 2nd...

My go to stay for CDG is: https://www.ihg.com/holidayinnexpress/hotels/us/en/roissy-en-france/pardg/hoteldetail
You can walk to the airport shuttle train after a leisurely breakfast. Take the train into Central Paris and have a look around and a nice dinner then return to your airport hotel.

I've done it 3 different ways Paris to Bayonne by train and on to SJPdP, Paris by air to Biarritz, and Bilbao to SJPdP by bus thru Pamplona( late arrival in BIO and stayed overnight. Bilbao is a great place to see so I advise that it should be done once. Flying to Biarritz was the easiest.
You are right about the time table only goes out a few months. I t doesn't change much so check a closer date on the day of the week you are traveling. Buen Camino!
Very good service, try to get the direct bus much shorter time: Also join Alsa Plus it's free and has many benefits: https://www.alsa.com/en/web/bus/home
I have made this trip twice from the Paris airport CDG. You catch the train at the lower level and the signs are easy to follow: I've attached a link:

Good Luck
I love to go thru Paris and have flown to Bilbao twice and Bayonne once by plane and once by train all departures from CDG. Bus from Bilbao the next day and from Bayonne I went to STJPP and Irun the same day.
Bilbao is worth a visit especially if you haven't been there.
I have done this by bus from the airport to Bilbao bus station then on to Pamplona for a change to SJPP stoping in Roncesvalles where many Spaniards begin the trek. I think there is only an afternoon bus from
Pamplona. I stayed overnight in Bilbao and started out the next day good for jet lag...
I did as well, if you haven't already it's good to join Alsa Plus if like me you are over 60. I have the app and find it easy to use. The website speaks english to me the app not so much!
An alternative is to fly CDG to BIO, Bilbao. Then a bus to Pamplona and another bus to St. Jean. I've done both and they are about equal in time. Both Biarritz and Bilbao are worth the visit.
Made the 10 min transfer in Bordeaux with the help of TGV personnel on the platform. Today on this route you would never dream that there is a strike or inconvenience. The conductor asked if I spoke French and explained how to sign on to the WiFi on the last train
On the TGV from CDG to Bordeaux and it’s on schedule and not overly crowded. Planning to go on to Bayonne and catch the last train to Saint Jean.
Will update upon arrival
