I've used taxis from Madrid airport many times. They are really convenient, and yes, sometimes convenience is rules the day :) I've also taken Metro and Cercanias to and from the airport and around Madrid quite a bit. They are easy and cheap to use.

Definitely taxi. Its pricier than public transport, but that early in the morning, it is probably your only real choice. Taxi drivers in Santiago are good - they spend a lot of time ferrying people to and from the airport and so on. They know the drill.
