Like @Portach I walked the Via de la Plata in two parts, but walked from Zamora to Santiago in October, 2008, then went back in March/April of 2009 to walk from Seville to Zamora. There was some rain in Galicia which was no big deal. Otherwise the weather was very pleasant, not too hot.

I agree it's a pretty warm time of year to do the VdlP. You could do some version of what I did: Start in Zamora or Salamanca, go to Santiago, then back to Seville by some means (bus, train, air) and walk to Zamora/Salamanca from there. You'll get the best weather on both parts of the VdlP...
I do realize that almost any activity can be unsafe; however, sometimes on a route like the Via de la Plata - - which as has been pointed out, has longer stretches without services, etc. - - hitching might be the only option. It's been my experience that trusting in God and others for help...

Kate, I've only walked the Via de la Plata (fall 2008 and spring 2009) on my own and loved it! As others say, you will meet up with people at the albergues so can choose whether to walk alone or with others, or some combination. I felt safe the entire time. Never felt any draw to the CF...
