Make sure to take the longer route via Oseira would be my tip. The stretch from Ourense is a good one a but without much in the way of sights, so it would be a shame to miss the monastery. There is a new(ish) Xunta albergue there if I recall.
I think the 37km is based on going via Oseira. The other route shortens the walk by c5km. There are normally options a few km after Cea and at Estacion de Lalin before A Laxe, which would bring the day within your maximum. You would need to walk slightly further on the stage from Ourense.

I second the recommendation for Ourense. You probably need a bit more planning for accommodation than CP and CF, but I have done it twice and prefer it to the CP last 100.

At the start of April there was no activity on the railway between Zamora and Granja.
The only part of the Sanabres where we had any issues was the walk out of Gudina where there was a lot of works traffic. The drivers were courteous and gave us space so it didn't spoil what ws a lovely stretch...

I also visited Caceres and Merida a few years ago, so the places I most want to visit along the way are are Salamanca and Zamora.
