Yes, in March I had a full 2 1/2+ days of rainy weather. Not any heavy rain, just more of a steady light rain starting on day 2. It was still very enjoyable.

One restaurant I really enjoyed was Restaurant Cortes in Sigueiro. It was recommended by my hotel and it was excellent.

What a difference a few weeks make. I started on March 15th and there was a total of 6 of us walking each day. I stayed in private rooms along the way and didn't see any other people in my hotel / pensions.
2 weeks ago my weather app predicted rain everyday in the late afternoon, but it came early morning each day. But I didn't encounter much mud on the Ingles.

The hills leaving the towns of Pontedeume & Betanzos are fairly steep, but not very long. They really get the heart and lungs pumping first thing in the morning, but they are very doable.
