I've camped on the Portugese Camino from Lisbon to Santiago and never had a problem with police or landowners, or with finding a good campsite. Sanitation is not an issue, there's lots of open space.
I always carry either a bivibag, tarp with groundsheet or tent proper. Weight is no problem with the first 2. In return, you get peace of mind. You don't care if the albergues are full, you can stop where and when you like, and you don't have to worry about having to pay hotel rates.

I bought the 30 litre Decathlon, because I thought the 20 a bit small. The 30 fits all my Camino gear with room to spare, which is good for winter caminos.

It can be done with the right gear, I've camped down to -5°C on the CF in COVID when there was nothing open. But it's not necessary, there are enough albergues open in winter. You can afford to leave the tent behind and walk the lighter for it. Winter Caminos are the best imo. ☘️

Shoes depend on the person. Three things don't, however; no doubt you know already but they are socks, poles and correct distances are crucial for foot happiness.

I use a Forclaz waist pack from Decathlon ... Cheap, effective, capacious. It holds all the stuff I need close at hand and the stuff I want to be sure isn't stolen (unlikely) or forgotten (all to likely in my case).
