I wore trail runners (La Sportiva) on the Camino del Norte last year - they were fine. Nice and light! I found some light merino wool socks to wear with them.
Since my first camino I have had very few blisters because I use a barrier cream or vaseline.

I've taken my 35L Osprey pack as carry on luggage with various airlines (Emirates, British Airways, Vueling, Etihad) before and after my 3 caminos and never had a question about its size. I think it's always safer to carry on!

I'm planning my 4th camino - similar dates to you.
I'm going to bring my standard light long-sleeve merino, plus a warmer merino jacket and a light water-proof/wind jacket that I've taken on all my spring/summer caminos.
But I'll be adding to that an ultra light weight down jacket...
When I walked the Frances starting in March I had a long sleeve thin merino and an Icebreaker 200 like yours. I wasn't cold.
Remember you can always put your light rain jacket on and that will help keep your body heat in.

May can still be cool - and I have walked the Frances at that time of year! I took a light fleece and a windbreaker (spray jacket) and a poncho.
The jacket adds an extra layer of warmth for early morning starts and evening wear - times when you wouldn't want to put your poncho on.

I met a French pilgrim on the Primitivo who was wearing them and he was very happy with them.
He had walked from his home in France and needed to replace his shoes after 800km. So you may not get more than one camino out of them.

I've taken a headlamp on 2 caminos - and used it only a couple of times. In those instances I most likely could have used the light app on my iphone instead.
If you're trying hard to cut down, I would leave it out. I am not taking my headlamp on my next camino.

I have walked the camino Frances twice with a light rain jacket, pack cover AND poncho.
I will take all three on my next camino.
The rain cover and jacket are good for misty, light rain. The poncho is fantastic for heavy downpours. Sometimes I used all three at the same time - everything...
I wore a technical shirt on both my caminos. I never thought I could as I always prefer natural materials but I found it very comfortable - and great sun protection.
The shirt was a Mountain Hard Wear brand, light blue, long sleeve button up style with mesh under the arms. It died easily...
I had a 'sea to summit' brand ultra light day pack that weighs just a few grams and compacts to the size of an egg. It was very handy for afternoons and evenings!
