Last December we stayed exclusively in casa rurals, pensions, and hotels and we're glad we brought sleeping bags that we could fold out and use them like blankets/quilts. The rooms were often cold and the blankets sparing.
I think the only way that you will know is to walk a test run of 12-15 miles/day 3-5 days back-to-back. This test has never failed me. If the shoes work they'll be great and if they don't they won't.

We walked May - July last year and had a couple of wet, cold June days. We carried long sleeve shirt, fleece jacket, light rain coat, light rain pants, and a warm fleece hat -- this combination worked well and I was glad for the warm fleece hat.
We've always been able to locate someone with a corkscrew, so we don't carry one. French country knives are widely available for less than €10 (and very handy). I would just buy one on the first day.
It will work fine. It is relatively light and has two 2.5 amp usb plugs - which is pretty nice. The lighter, cheaper ones often provide less current and take much longer to charge your devices.
We used the very light weight dry bags and after a day of walking in the rain we were glad we did. They were light (added about 8 ounces of weight - we used 5 relatively small ones for organization), quiet, and there were a lot of people with wet stuff they were trying to dry out.

We just got the Western Mountain everlite - 14 oz (on our home scale). They are 850 down, compress into a stuff sack not much bigger than two fists, and zip together nicely, so I think we'll get good use out them. I think they are available online, we got ours from Backcountry.
