A mix is always good, but I've been on the meseta three times now on three different caminos and I've always found something to enjoy in the experience

I walked the Camino Madrid in 2022. Started in Madrid and stopped in sahagun. You might find some useful info for your planning in my blog.
Did the Madrid in June 2022.
Skipped the walk out of Valladolid and caught a cab to Simencas. Glad we did.
At the albergue in Puente Duero, the hospitalero really emphasized to enjoy the small towns along the way from Valladolid.
My blog entry for the day:
Simancas to Peñaflor de Hornija

Walked the Camino Madrid in 2022 with my partner. We also started in Madrid, and although very urban, we did enjoy the walk out of the city. Lots of countryside and farmland ahead of you. Enjoy the Sierras for the decline and the descent. We chose not to walk all the way to Segovia and stop...
In Segovia my partner and I had an outstanding tour of the Jewish quarter. And we visited the cathedral.
In Valladolid we went to the previously mentioned museum and we toured the House of Cervantes, author of Don Quixote.
Lol in a perfect world, you'd have a day to spend in each
In Valladolid My partner and I visited the modern art museum in a refurbished old Abbey, and we also spent the morning walking around the home of Cervantes, author of Don Quixote
Just to offer contrary opinion, I used all trails pretty consistently. Although true that it is marked in a lot of places I would sometimes find the occasional screwball turn and being in the mid-thirties centigrade for temperature I was not in the mood to get lost or wonder if I was on the track.
My partner and I use booking.com to get a room so that we can have a good night's sleep. Unfortunately our room was on the back side of plaza de espana. Close to the start point, but noisy all night long lol.

Just did it last year with my partner. We absolutely enjoyed it. Very lightly traveled for sure. Might get some useful info out of my blog.

Just completed about two weeks ago. I echo what others have said. No probs with accommodations or stages. Temps were high 90s for first week. Had to adjust schedule.
Saw no other Pilgrims until three days left.
Very small towns may not have an open bar first...
Is that the Real Iglesia de Santiago at Plaza del Biombo that you are talking about?
Where can I find info on when stamps are available?
Starting the Camino Madrid to Sahagun on June 10th.
