Hi Stacey - you don't say where your destination is - Rome or Santiago ? - if you are heading to Santiago it seems you need to follow the Via Domitia - there is some good information here http://pilgrimagepublications.com/pp_2014/via-domitia/
I have not walked this route but other pilgrims here...
