As far as I know Redondela is the meeting of the Coastal Camino with the Camino Central. We plan to be there on Friday 31st May. I am unaware of the distances involved from your starting point on the Coastal. Are you in serious training for the Camino, or are you relaxed in your preparations? (I am from near Glasgow, Scotland but live part of the year in France).
 
Baiona is just 126km away from Santiago de Compostela. Walking on the treadmill on an incline is all the training we're doing...plus losing weight so that it's easier on the knees, LOL.

We hope to be in Santiago on the 4th June. We will spend two nights there before catching the bus and Metro to Pavóa Varzim where we will spend another two nights before flying out to Edinburgh and home. I can’t offer much in the way of advice with regards preparations but only to make sure that you, the daily distances you propose, your feet and footwear are all in tune. 👍
