Hello! It’s a question that I had prior to starting too.
Long reply below, but thought I would share my experience.
I’m just Day 5 of my
Camino Frances, and have been able to get to Mass almost everyday (starting with a 7pm at SJPP). Most of the larger towns have Masses in the evening (7pm or 8pm) for pilgrims.
But not all towns will have them. Sometimes, the priest will be in another town to celebrate Mass, so none in the town you’re in etc. This was helpful:

It helps to do research beforehand. And ask the hospitalero at the Albergue for any insights too. For example, it’s Sunday today and there is no evening Mass in Estrella (where I’m staying for the night), but there was a midday Mass at Villatuerta (the town just before Estrella) which I could have gone to. Oh well… but the albergue I’m at tonight is connected to the Capuchins Order and the hospitalero here told me how to get into the choir of their most beautiful old chapel to spend time in prayer. Do research + ask for local knowledge.
And if you’re at a Mass, don’t forget to stick around for the pilgrims’ blessing and have them stamp your pilgrim passport. Some churches give medals or crosses after the blessing, or they have guided tours, and many have beautiful stamps
