Does anyone know if would be possible to purchase hiking poles in Tui?

Yes, you should be able to find quality ones in the Ideas Peregrinas shop 1min from the Cathedral,, or cheaper ones at other places in town. Their cafe serves the best meals in town. Haven't stayed with them, but have heard good things.
