One Day Walk out of Santiago ?

Odd title, please bear with me. I'll be volunteering in Santiago July 01-July 15th this year. I've one day off each week and would love to spend those days walking to a "destination" and returning via taxi either in the evening or early next morning. I've walked several different routes , entering Santiago from different points and wonder what, if anything I could catch/enjoy from about 20/25 K out of the old city.
Walking any series of days before or after will not be possible this year and I'm grateful to have the opportunity to volunteer...but my heart wants to walk at least a little.

Looking for the 'frequent walkers' to offer suggestions. Thank you in advance!

This is probably not a unique tip/idea, but it reminds me of the year that I arrived in Santiago with an extra day on my hands. I didn't need more time to explore the city (I'd been there several times before) and my feet were itching to walk. So, bright and early in the morning I headed out for the 20km stretch to Negreira (towards Finisterre). Once there, I stopped at my favorite bar for a bocadillo (the place is called A Esmorga, and the bocadillos are amazing), then caught an afternoon bus back to Santiago.

I joked that it's the longest I've ever walked for a sandwich! But it was a great day. And a great sandwich.
 
Last year with a spare day in Santiago, I took a cab early down to Padron and walked back to Santiago along the last stage of the Portuguese. Even though I’ve already walked the whole Portuguese, the last stage is a terrific walk and well worth repeating….way preferable to the last stage of the Frances into SdC in my opinion. When I volunteer in the pilgrims office, I often walk out to Negreira after a morning shift, stay the night out there, (plenty of accomodation options) not a particularly interesting town but a beautiful walk, then walk back to Santiago next morning for the afternoon shift. I always meet pilgrims I recognise along the way. I did it to and from Padron last year too, also a lovely walk.

Will you be volunteering at the pilgrims office? What is this day off you speak of?
 
Not in the Pilgrim's Office specifically, but with the FCJ/Camino Companions...Support for the English Speaking pilgrims in the same building as the Pilgrim's Office Upstairs ( English announcements at Cathedral, help with English Mass at Pilgrim's Office Chapel, coffee hour, one on one support/counseling in the afternoon for those who might need that service, etc...)

Ah yes, you guys have regular hours upstairs.. and the only place to get a decent cup of tea in Santiago!

There's a wonderful new, family run albergue in Ventosa, A Casa do Boi. Just 10km out the path towards Finesterre, it has a lovely garden bar/restaurant.. easy walk after work, relaxing evening around other pilgrims and easy walk back at 7am, would get you back for 9.30 am. You might consider doing that? Much as we love Santiago, it's nice to get a break out of the city sometimes!

You could take the train to Padrón (it only takes a few minutes) and walk in on the last 20+km of the Portugués.

I stayed in Santiago for 5 days last November and walked about 20K every day. I found many beautiful trails using Wikiloc.
 
Walking the last day of the Sanabrés to Santiago from the south was pretty. But I don't remember any particular destination at the start of that day.

Different from that, though, we rented a car with an extra day in Santiago to drive to the enormous monastery at Oseira to take the last tour of the day and attend Vespers, which we had missed walking the VdlP/Sanabrés. It was a beautiful experience with maybe 10 Trappist monks chanting Vespers in Spanish and only my wife and I in attendance, if that appeals to you. You could combine that with some walking near Oseira, which is beautiful country. Oseira is approximately a one-hour drive from Santiago and there is a terrific Xunta-run albergue on site if you want to spend the night there and drive back early in the AM. But it would be way too far to walk to in a day.
 
Get a Spanish mobil number + data while on the Camino
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
I agree. casa do Boi is great.
