I will be taking a rather long journey on the Camino, from Lourdes to Santiago and possibly onwards to Muxia/Fisterra. So I want a credencial that is big enough to contain all my sellos.

Does anyone know where to obtain the LARGEST credencial / pilgrim's passport???

Is it from a Confraternity in another country, or should I obtain it in St.-Jean?

Credenciales tend to all be about the same size. Just buy more than one in St Jean! Many, many pilgrims do this. You can either join them up with tape or keep them separate.

Our new credenciales from CSJ have 114 spaces for sellos. We asked for the '5 sheet A4 -folded into A5' version. Page 1 has our details and the other 19 pages have 6 spaces each. You could ask if they can make a bigger issue maybe, otherwise photocopy the middle sheet and 'back to back' several extra sheets. When you reach the middle of the booklet you should be able to judge how many more spaces you need. You could then add the extra pages in at that point or wait until the last sheet and add them in there so that you work it out for the last two sides to be the end of your pilgrimage or for the Cathedral stamp. (I did the latter last year with the smaller CSJ credencial)
The spaces are a good size too for the larger stamps.

As your starting in Lourdes why not get one there "carte de pelerin de Saint-Jacques,I have 50+ stamps in mine,its the second tourist office not the one in the town center,I think I paid 2 euros.
because I consider Muxia/Fisterrra a Camino in itself I picked a free credencial from the albergue in Negreira "camino de fisterra" a small credencial with good distance maps and Albergue lists with telephone numbers.
although the one from Lourdes is big enough for both.
