My wife and I walked the CP from Tui to Santiago. We booked all of our accommodations through booking.com several months in advance However you can book through Trip Advisor,Expedia, Hotels.com or Airbnb. We chose booking for their convenient free cancellation policies. Prices were reasonable. We chose hotels,hostales for the same reason as you. Here’s where we stayed:

-Porriño -Hotel Internacional (60€)
-Redondela -
Apartamentos Descansiño (75€) 3 bd apt. There were four of us. Very comfortable. Washing machine, etc. 34 666 260 651

-Caldas de Reis- Hotel Balneario Acuña (75€)
-Padron Os Lambrans(80€) Aldea de Lamas, 81, 15910 ( locates about 2k off the Camino but the hostess Margarita will pick you up and drop you off. Nice country estate for a peaceful rest before your ascent into Santiago.
Some were better than others, but we never had to worry about a room since we booked ahead. You can read up on them or look for comparable accommodations.
