Hi,
I am planning to do Via de la Plata starting end May 2018. For Visa requirements I am expected to attach proof of accommodation/ Confirmed reservation with Visa application form. I am planning to stay mostly in Albergues. Do Albergues en route will send me confirmed reservation for application of Visa?

I doubt that albergues will be useful. Any reservations at the beginning and end may be sufficient. Good luck.

I was unaware that we needed a Spanish Visa! My husband and I are Americans doing the Camino Frances the end of May. Do we need a Spanish Visa? If so how do we get that?

as far as I know Americans and Canadians (thats me) do not need a visa. You have 3 months visa free. However there are other countries, South Africa comes to mind, those pilgrims need visas.
 
An American I was working with before Christmas told me you get 90 days inside the EU Schengen area (includes Spain) without a visa and her passport had to be valid for at least 3 months after her expected date of departure.

That was 5 months ago but probably still valid. Your State Department website would be the first place to visit.
 
Americans do NOT need a visa and as Jeff said, you will get 90 days inside the EU Schengen area with only a passport, and yes, it must be valid for 2 months after your expected date of departure. If it's changed to 3 months, I haven't heard that.

I am Belizean and I did the Camino last September (2017) accompanied by my wife Gladys and son John.
For proof of accomodation we just submitted our planned itinerary of stops along the way. The Spanish Embassy/Consulate understands the nature of the Camino and will accept that. You must state, however, the purpose of your travel i.e. to do the Camino. A good website is https://godesalco.com/plan/frances if you want to work out an itinerary.
