Starting in Leon or Sahagun - for 7 day walk

Hi I fly into Madrid this Saturday for 7 day walk and I am undecided if I should start in Sahagun (where I last left off) or in Leon.

I am worried that I'll arrive too late in Sahagun to get a bed (won't arrive til about 6) and won't be up for a walk in the evening if I have to go to the next place for a bed.

But with Leon, I am a little worried I will be facing some hills too soon as I haven't had a chance to get into shape this time, I like how Sahagun buys me a few more days.

I am also strangely a little apprehensive this time about safety, something I haven't worried about before and would prefer the route that feels safest, and cheeriest, if that makes sense.

Anyway I am undecided and wondered if anyone has some ideas.
 
St James' Way - Self-guided 4-7 day Walking Packages, Reading to Southampton, 110 kms
The first edition came out in 2003 and has become the go-to-guide for many pilgrims over the years. It is shipping with a Pilgrim Passport (Credential) from the cathedral in Santiago de Compostela.
Just get off the train in Sahagun, there are plenty of places to stay there. Just walk. The solutions will simply present themselves. If they don't, just go into a bar and ask. Or talk to a policeman.
You know that by now, I assume!
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
Starting in Leon would be my choice. Hostal San Martin is a small pension close to the Cathedral. I don't remember it being too hilly walking on to Villar de Mazarife then Hospital del Orbigo.
