Funny when you add up each item to realize that you're carrying nearly 100 different things.
Your list looks good to me, and is very similar to mine. A couple luxury items I like to carry are:
A quick-dry wash cloth mop my brow
A sweatband
Wet wipes (or travel size baby wipes)
Make you relief 10% easier and book your hotel in Madrid near the train station you're departing from. If you'll be spending some time sight seeing in Madrid, could be worthwhile to book a hotel near the sights you want to see.
I've carried on some pretty large bags. When I did my first Camino, I carried on my Talon 44 backpack.
Worst case scenario, you can gate check your bag, which is free. Take a small, feather-weight bag as a carry on just in case so you have access to your travel essentials.

Gators and gloves take up very little space and don't weigh much. If temps will be cool in the morning and there's a likelihood of wet weather, I'd take them. If it turns out to be warm and dry, they're not so heavy that it really matters.
