I am currently working as a Hospitalaro in a newly reopened Donativo Albergue in Vergen del Camino, just a short distance from Leon. It was closed for 5 years due to, initially the pandemic. It is sparkly clean and looking for wayward Pilgrims -

IIRC one side depicts the distance from the beginning to Santiago, while the other side displays the remaining distance to Santiago. Of course, I could be wrong. In any event, I am sure Michael will weigh in shortly with the correct answer...

I found that distances between stages on apps were generally a 1-2 km less when compared with distance measured on my Garmin/strava. I wouldn’t get too fussed about it. It can often be a few Km from one side of town to the other.

Do you have an example? From where to where. There are sometimes 2 variations one in green one in red. These wouldn’t agree with each other.
