Matosinhos follow the river to the sea. Stay the night there. Lovely fish grill restaurants . Fao is a dear little town.
Staying with Fernanda is a joy. Ponte de Lima is a great place.

The municipal albergue is good and large,
we were there day before a festival in early May. Arrive by 2 pm when doors open and queue. Café opposite good for a beer or two.
Ponte de Lima to Rubaies section (Central) has a steep rocky climb and descent. On the Espiritual Variante from Combarra to Armenteira there's steep climbing plus you then have the route of Water and Stones that is quite a scramble. However we had fine weather and managed

Another early May 2018 walker here. Our group experienced mild weather, a few very wet days (chilly) and some days too hot. So really we experienced a bit of everything apart from bitter winter weather.
Clothing LAYERS are the answer.
A good waterproof poncho or jacket - vital.
There are a couple of quite steep, rocky stretches on the Tui to Santiago Camino but you could arrange for your wife's rucksack to be transported then those stretches will be more manageable.
