I think of the 3 Camino I have done (Frances, Portuguese and Primitivo), Primitivo is by far the nicest. No fear of falling, you are always on a path, and can stay well away from the edge. Frankly, the walk up to the Virgin from St. Jean on the first day of the Frances was probably more dicey...
Another vote for the Primitivo. About the right distance (assuming you can walk 25k a day), it’s a “full” Camino, and nice variety of towns and country en route. Hilly yes, but nothing terrible.

I made the mistake of doing it in early afternoon. The hill was not terribly steep, certainly no worse than others on the Primitivo or Frances, but it was.so.hot!🥵 Needed 2 Kas and a couple of beers in Armenteira to semi recover!😀
They are a very reputable company, so no worries at all about them defrauding you. But which mode you use to pay is up to you. As others say, bank transfers are very common in Europe (and Asia too btw).
