San Juan de Ortega is not really a town! Not really a village even. The church and old monastery and a couple of BnBs is most of it.
But the next two places (in neither of which I have stayed), that is Ages and Atapuerca have multiple listings on Gronze for beds of varying sorts, and I know...
I think I stayed three or even four times over the years and always enjoyed.
Certainly got the garlic soup the first time (2009). That little bar next door is a gem. What I remember most is a great air of conviviality. Lot of people staying and sitting out on the benches, and lot of people...
I have eaten three of four times at La Catedral. It is very close to the Cathedral - facing the front door turn to your right, It is just 100-200 m. Not super special, nor super expensive, but usually has fresh anchovies or fresh sardines.
I did invierno in Nov 2019 just before Covid. I have never been so wet, continuously! That is beyond control.
But….I’d do it again. 😉
I met no one. And infrastructure was perfectly adequate.
On a slight side issue.
I am not a sailor of any kind and generally wary of boats smaller than the Titanic.
But looking at @JabbaPapa's picture, there must be a time when the water level is going down that the lake becomes un-navigable along its length because the old bridge must get in the way...
This is a little bit off piste, but only about 6km from Hontanas, (after Burgos along the CF). I think if I happened to be near on the right day I might make the diversion.
The date changes each year, as it is on the Sunday after Corpus Christi, which is the Thursday after Trinity Sunday...

I have got 5.7.5 for Camino Frances, and no legend listed. As you.
But if I go to the All the Routes version, then I see this, and the version is 1.3.8 "2w ago" But note grey, not red(-dish).
Hi @David Tallan we must be looking at different versions!! ;)
For me the sign (but as I said not red) is coming next in that list under 'Has a train station'!

In the Map Legend I can see the same symbol, but in black/grey saying:
Indicates that this town is commonly published in guidebooks as an end-of-stage, often resulting in large numbers of pilgrims. Enjoy them or avoid them as you wish,
but i don't think that would make sense for...
I just turned on my WisePilgrim, and it updated, and i checked those two entries and that symbol is not there for me! But it remains on other places.
@wisepilgrim is usually SUPER-responsive on here!

Other opinions are of course valid and welcome.
A vote here for the Baztan, a fairly gentle and, when I walked a few years ago, almost solitary walk from Bayonne to Pamplona. BUT probably NOT ideal for someone who is walking for the very first time. A little bit of navigation skill is useful, but you will get GPX and be able to use your phone...
Now you have got past that early "bump" of crowds between SJPdP and Pamplona you will find things settle down a bit and you should be able to set your own pace and find your own way. Take each day as it comes.

Long ago (now) there was a small albergue at the church - my favourite ever I think. One of the guests that night was an Italian (I think) expert in church architecture. He was very insightful...
