The way between Caminha and Valencia is very beautiful, walking on the hillside next to the river with a great view of Spain on the other side. Have fun.
You might want to check distance requirements before you skip anything North of the river (border) unless you don't care about getting your Compostela. That said, Vigo isn't the best part of that Camino.
It's very flat most of the way but there are a few hilly spots. I'm 64, overweight, with two total knee replacements and I did it. In fact, I'm doing it again in July.
Just take it slow and drink plenty of water. You'll be fine. Enjoy the view. Post some pictures.
