Of course you can start collecting 2 stamps a day from Baiona. Memories for your camino
Once we started in Lisbon and needed three credentials each toSantiago because at almost every bar, restaurant, albergue , hotel etc we collected stamps
The Variante Espiritual starts about 5 kms beyond Pontevedra.
If you have one stamp from Vigo and one past Vigo on the same day and you keep on collecting two stamps per day untill Santiago you can apply for a Compostela.
Although the Variante Espiritual is not recognized by the Pilgrims...
Just as an aside, when I was in Vigo last summer, there was a tourist office in the Centro Pricipi area. The lady there spoke English, was super helpful, and gave me great directions on how to get to the buses.

I really appreciate the advice! I thought there was no chance. I have procured a new credential and have two stamps for today now. I bought it from Albergue Parroquial Santiago Apóstol de Redondela. They were very nice to help me a bit late in the day.
In addition to @kenwilltravel you can go to Caminha by train and cross the Minho river to A Guarda and continue all along the coast

Vigo to Redondela or Cessantes (+3 km)

great suggestions... when we experienced torrential rain as we entered Baiona so we relaxed and spent a couple very pleasant days there before continuing our camino. The old part of town has lots of great little cafes and was very lively and hospitable. The harbor and nearby beaches are lovely too.
Three possible rest day spots come to mind: Caminha, Baiona, and Pontevedra. Caminha is a charming small town. Baiona is a bit larger, but full of character. And Pontevedra is a wonderfully beautiful city. I like your idea of walking in four day blocks. Bom caminho!
Maybe other bikers or walkers can confirm that bikes go on board of the (fisherman’s) boats to set you over from Caminha to A Guarda ?
Otherwise you have to do an about 30 kms detour to reach A Guarda.
From Caminha follow the road or better the Ecopista path along the Minho river almost to Vila...

Where did you end up starting? I am looking at the same route for this summer-also starting in little Oia, but I am a little confused if I will be able to get out camino passport there and stamped and if it is worth it, or better to start in Baiona instead.
No sand north of Vila do Conde. Lots of road walking and after Esposende a nice rural dirt path with a nice river crossing an a narrow bridge .
Further north you could hit the beach in Vila Praia de Âncora but thereafter i is roadwalking to Caminha.

You even can choose an other option.
Entering Nigrán from Baiona by walking along the bayside , you go over a bridge to the right by following the yellow waymarkers BUT just after the bridge turn to the left and head on untill you see the coast again . This was by then when I walked there...

My understanding is that the Coastal is the easiest of the Camino routes. We are looking to do another 5-8 day ride on a different route toSantiago in the next year. Any suggestions/advice which would be the next easiest to begin researching?

I can relate to the surgeries but good for you (and me) and others - for doing it. And walking in a way that works for us. This time around I am doing a slow Camino Portuguese. When I walked the Frances in the fall the downhills and over 20km per day were hard on my knee on my hip replacement...
Did you try flying toSantiago, then a bus to Vigo and then a local bus toBaiona?
Vueling from Gatwick and Ryanair from Stansted seem to be competitively priced on Google Flights.
Casa Antas is brilliant and worth a short detour from the coastal path. We call this our Glamino because we stay in Airbnbs and small hotels as far as possible. 🤗
