The part of the walk i least enjoyed was Sarria To Santiago. You have more than enough time to do the entire walk. Why not postpone your decision and see how well the walk progresses and then decide to skip some portions (if you need to).

I don't know about the energy part, but being an older pilgrim I found them indispensable especially during the decent to Zubini section. The wicked section was tricky enough with the poles.
The poles do save on the knees. I would recommend them.

When i stayed at one monastery a fellow started sawing wood almost immediately after laying down. A woman down the dorm somewhere started complaining 'make him stop. please make him stop-- etc. That one I would have liked to have seen her gone before the snorer.

Don't worry about it. I had to get up once each night but I was quiet and tried not to disturb the others. Try to get the lower bunk if possible - it helps a lot.
