Check the France to Spain regulations. Paris may still be in an EU red zone.
Canada doesn't have a QR code system. A copy of your immunization record from your provincial health authority (both on your phone and in paper from) is essential documentation to carry with you, but you probably won't need it to enter Spain as you are coming from a "COVID safe" country.
