I'm also from Canada, but the opposite side of the country (Vancouver Island). After my first Camino, I received a gift of a brass scallop shell and mounted it to a piece of driftwood. And I couldn't resist the latest addition to my rose garden - "The Pilgrim".
I did not notice as much graffiti when I walked the Frances in 2014, but after coming off the Primitivo last year and joining the Frances, I definitely noticed it, and how many km. signs had been taken (and some broken in an attempt to take them).

I met several people who were walking the Camino in stages over several years, mostly because of time limitations of their annual holidays from work. They did as you said; starting again from the place that they had finished at the previous year.
I agree with you that the course would be worth the money. I am still working my way through the free ones, but like them so much (and find them so useful) that I would pay and continue further.

I served as a hospitalera last year, and was often asked to stamp both a credencial and some other document such as a journal. You should have no difficulties, and as others have said often the stamp is just left out for you to use yourself.
