If you want to go back a bit further US President John Adams wrote journals about his unintentional visit along the Camino....He's not very complimentary about it's state in the late 18th century.

The German run albergue in LaFaba is amazing - clean - efficient and has a really nice small chapel on the property. It is the larger albergue in the tiny village.
The smaller albergue is run by two couples. They offer an phenomenal vegetarian meal - in season harvested from their own garden...

I've stayed at the same Albergue in 2014. It will be quite empty this time of year I suspect. I also stayed at the Hotel Aroi Bierzo Plaza in the Plaza Ayuntamiento 2017 and it was acceptable at relatively inexpensive for a hotel room.

Read your Story Susan. Very touching. I'm glad you were with him. Just a small word of preparation for you. Camino may be less "quite" than you expect. Everyone will ask you "why" you are walking Camino. Your answer may shock them for a moment. Many/most people will be their on "holiday"...
You've asked for a mileage estimate based on your age. As you no doubt know, age is only a minor factor in determining the correct mileage to travel each day. I've walked with 90+ year olds that could easily out-distance me although they were typically wise enough to be going quite slowly...
It's a clever idea, but as others have mentioned, not really necessary. You can refresh your water with lovely cold water from the fountains in most villages. I don't recall very many fridges or freezers - but I wasn't really looking.
