Wow!!! My favourite day on the whole hike was crossing through the snow in the pyrenees, perhaps I need to do the hike in winter also. What a challenge that would be! I imagine it would be a lot slower going..

May 2012 poured with rain as I soon I crossed the Castilla y Leon border. The rain lasted at least a week if not more but it was quite on/off. I hiked into an albergue completly sodden only twice.

Absolutely agreed.
People change, grow and learn on the camino so I would suggest that those groups of people you've identified are perhaps exactly the type of people that SHOULD do the camino (if they have chosen to try!!).
How about camping outside of designated camp areas? I know in Australia this is frowned upon so I'm curious if you would get into trouble doing it in Spain. I met a Spaniard whilst hiking who only camped out, we crossed each others paths for weeks but my broken spanish and his non-existent...

The backpack is definately too big. This is the backpack I use: http://www.rei.com/product/828433/ospre ... el-38-pack its the perfect size and prevents you from packing too much. You could go up to the next level if you wanted a bit more room...

I'd suggest trying to avoid the larger albergues and the more 'standard' stopping points each day. Look for the smaller albergues, perhaps private ones that hold communal meals. This is how met people after losing my intial group when i had to slow down due to injury. One really awesome albergue...

IMO you really dont need the gaiters, overpants or poncho. I hiked with a light breathable rain jacket, quick dry pants and a rain cover on my pack. The quick dry pants are awesome, you might feel a little cold whilst in the rain but as soon as your under cover they dry in minutes...
