We stayed there, and enjoyed their excellent paella. I think they had only recently opened back then so I am pleased to see they are still running!
Everything was donativo, including the beer.
My wife and I walked that part in Sept, she sleeps hot and rarely used her sleeping bag. I sleep cold and used it every night.
We are in roughly same but opposite shoulder season now, so try it at home. Can you sleep with just the liner?

I kept a small journal and recorded everywhere we stayed BUT I wish I had taken a photo of each one, even though they were all significant at the time they tend to blur together (at least for me) over time.
I prefer a poncho but what you have got is fine.
Recommend :-
1) Dry bag(s) or garbage bag to protect inside your pack
2) Walk in shorts and with merino sox.
3) Keep one full set of clothes dry for the evening, that might mean putting the damp/wet set on next morning to walk (don't worry you...

When we walked there were two ladies in the vineyard picking grapes and invited us to pick some too, we took a small bunch.
Then the ladies left the vineyard and walked away, and we wondered ..... was that gift or not?
My only advice is to be flexible.
So
- bring a sleeping bag
- have plenty of time
- have enough money
- if all else fails, there are worse things than being in Spain with time, money and a backpack, Enjoy!
