I think this looks great! I love the idea of planning ahead and knowing where you’re spending each night. It gave me a total sense of freedom while walking - spent loads of time in prayer, meditation and just absorbing the absolute beauty!

You’ll find something - good advice to contact establishment directly (even if booking.com says full. Use wise pilgrim app for fuller lists. Try to stay a bit off or away from Bierly book stages.
Couldn’t state this more stribngly I hope there are NEVER Porto potties on any Camino!! For goodness sake carry a ziplock and some toilet paper. Don’t leave your trace!
I’ve just finished Sarria to Santiago- the weather wasn’t great many places were closed … every hotel/hostel I stayed in said they are fully booked for the entire season beginning Easter week. I think it’s going to be very crowded and you should book ahead.
I ate outside in September - really “stumbled” upon this place. I was awed by the building and the bathroom was fantastic! I thought for 14 Euros - the full bottle of white wine was superb!
