If you live outside the euro zone, I would open a Wise bank account and create a euro balance in it. Then you’ll have small fees to convert your currency into euros through Wise and then no currency conversion fees at ATMs on the camino.
There are other routes that are similar in length to the Francés but with much more solitude. For example, the Vía de la Plata sounds like it could be what you’re looking for. Look up some alternative routes and see if you find something that speaks to you.

All else being equal I would do the touring first. If you do it the other way, after a week on the Camino you might find it hard (physically and mentally) to get the most out of the touring.

Your location doesn’t matter. If you Google ‘enviar flores a domicilio españa’ or similar, there are loads of results for Spanish websites where you can order online and they will deliver it to any address and you’ll be able to add a personalized message if you like.
For a similar length camino, you could consider the Camino Inglés from either Ferrol or A Coruña. A Coruña is the nicer of the two cities but the route from there is not long enough to qualify you for a Compostela, whereas the route from Ferrol is long enough. The Inglés is becoming more popular...
