I totally agree. Walked from Torino to Rome this past Feb/Mar. Oddly, this segment was the only time I encountered other pellegrini - two different young Italian women who started from Lucca. The segment was pleasant enough and, as you mentioned, a change from other stages.
I just walked from Turin to Rome this past Feb/Mar. I would suggest backing up just a bit to Piacenza, which I found to be a charming town. You'd still be past most of the flatlands, but it would get you closer to the 700-800 km.
Sounds right. It's been a while. When I got there late, there was just a take out menu in the room. After one week in Italy, phoning in an order was beyond me. I believe it was Marina who came to assist. She also spoke no English, but it's much easier to communicate in person.
