I am walking from Leon at the moment. So far all the municipals have been open and very few of the privates. Gronze is not always completely accurate as the private albergues sometimes have to close as there are just too few pilgrims to justify the heating bill. So there is a lot less choice of...
If you want to do it together I suggest doing it in two 1 week chunks. However, I would say all the feedback from people who do the Camino very slowly as you propose get much more from the experience from those who walk it quickly. To walk the Camino slowly is a real priviledge and a truly...
To qualify for the Compostela, you have to walk the whole of the last 100km. You do not need to do this in one go. Stamps during the last 100km are very easy to come by. You can get them in every albergue and every bar along the way. I have put together a plan for walking the last 100km in 18...
It is physically demanding and poles are definitely recommended. It is a really beautiful walk and highly recommended but it is definitely the road less travelled.
For a seven day split I suggest the following:
Sarria to Mercadoirio 16.8 km
Mercadoirio to Hospital da Cruz 16.2 km
Hospital da Cruz to San Xulián do Camiño 16.1 km
San Xulián do Camiño to Boente...
Here is a suggested 6 day split:
Sarria to Portomarin 21.6 km
Portomarin to Lestedo 19.2 km
Lestedo to Melide 18.8 km
Melide to Arzúa 14.2 km
Arzúa to Pedrouzo...
Just make sure you have good rain gear. Rain trousers are light and really help. My wife and I will be out at the same time but at the other end of the trail doing a lazy four days from Saint-Jean to Pamplona. Even with rain I suspect you will love it. I have a list of my preferred accommodation...

I had lost (forgotten) my poles and without poles it is the safer of the two options as well as being kinder to your knees. To be honest there was little traffic and the cyclist were probably more of threat than the cars as they often more difficult to hear.
Having done this three times via, the trail, I did this last summer and went on the road all the way from Cruz de Ferro to Molinaseca. It is longer, there is a little traffic and it is not as pretty as the trail (but it is still pretty). We stopped overnight in El Acebo which felt enough. All in...
I have a list of preferred private albergues for Sarria to Santiago, I use for a group I take in October. Most are open in March but require pre-booking by email in March. Message me if you want a copy.
I have walked late April and it was still very muddy admittedly after a very wet winter but I think it is wise to have waterproof footwear and at least a walking pole till mid-June.
Buen Camino.
