The Madrid airport is huge. It can take 30 minutes by tram (times are posted) just to get from one terminal to the next. I would allow at least a couple of hours or even more if you have things to do at the airport.
And yes, your flight could be late. Especially if you are flying on Iberia. ;)

I had no problem with my trekking pole in my pack as carry on luggage from Madrid to Pamplona or from Madrid to Porto.
They do NOT allow them as carry on for flights OUT of Santiago. But you can check the pole(s) separately for no charge if you want to carry on your pack.
Once you are in St. Jean it is easy to get your bearings. The route is pretty clear and the pilgrim's office will have maps, credencials, and even shells. They can answer any questions you might have on arrival.

I had no problem wth my poles collapsed in my pack from LAX to Madrid or Madrid to Pamplona. But flying out of Santiago they took them out of my pack and told me to go check them. There wasn't time to get out of line and go back through security so I just left them there.
They do not allow trekking poles on the flight but you can check them.
They also have a reputation for delays. I experienced a couple and locals informed me that it is quite common. ;)
I booked my flight from the U.S. to Pamplona and my return trip from Santiago to the U.S.
I added a few days to how long I think it will take me to walk the whole Camino.
Nice to have a small cushion for rest days or sightseeing or those unplanned "bonuses". ;)

Thanks so much for all your replies. It does sound a bit complicated so more research is necessary before I book my flights. It may be too complicated to tack on other stops for sightseeing prior to my Camino this time.
