I did something similar, but just used a combo of a rigid tube into the bottle inserted into a flexible tube that went from the bottle to the top front of the pack where I could drink from it. No nipple to bite on (which sometimes led to water dribbling down my chest when I let go of the tube)...

I found Croc sandals to be perfect at the end of the day - useful for both showers and walking about town, and incredibly lightweight (due to the fact that I've got Sasquatch sized feet, I would strap mine to my pack). I used the men's swiftwater sandals (here's the women's version)
I did something similar for my Camino - but I just used a couple of pieces of tubing (one rigid and one flexible) along with the rubber bands. No mouthpiece, so I had to be sure the tube opening was up and drained back into the bottle or else I wound up having water drain all over my chest.
I used a Tilly Airflo hat when walking. It kept my head cool due to the mesh that allowed airflow (even in 40C/107F temps) and combined with a Smart Wool merino wool beanie kept my head warm down to 0C/32F temps.
