There is a little contradiction here: the simplest, the lightest; each additional pocket weights.

I never heard about knives restrictions in buses or trains.
In France at least, you are allowed to carry a knife (in a bag, in a backpack...) but not to hold it on yourself, especially if the blade can be locked open (like for Opinel). It makes a difference between "port d'arme" and "transport...

But it is not made to carry heavy contents. I limit myself to 7kgs including water and food.
Perhaps AMEX is not accepted on the site, but Visa or Mastercard should be. However European sales sites often require double authentication... do you know how to perform it with your bank application ?
When visiting a church, please leave your poles (and cap or hat) at the entrance:
- you will thus respect the building

I am just curious: I understand that you bring 2 Credit Card, and 1 Debit Card ?
Take care that they can be lost or stolen: why do not take 1 Credit Card and register another in your phone, in order to be able to pay contactless with it ?
I understand that rubber tips should be removed put on when walking on asphalt, but removed put on again when walking on soft ground.
I will try to put a madeleine instead, but I doubt it will survive more than 5 meters.
USB-A cord is the best choice for Spain, because in several places (buses, albergues...) you will find USB charging docks, and they are USB-A, not USB-C.
