I live in California, and I walked LePuy in 2018. I used Miam Miam Dodo English version (they have French and English) which is a great guide book. I called Gite (Albergue in France) ahead of time, and reserved a bed; many of them provided meals, too. The book showed various list of Gites...
La Malle Postale is a good carrier. They still operating, they recently sent me e-mail
I used La Malle Postale from Le Puy to Cajarc or Moissac (not clear) because La Malle does go beyond that; so, from there I used Transport Claudine to St. Jean Pied de Port. Both carriers are good.
I walked Le Puy to Santiago in 2018 Spring. I used Gronze.com and Miam Miam Dodo. Miam Miam Dodo was very helpful. When I looked for the lodging, I looked for the Gite (they called albergue in France) Miam Miam Dodo indicated the Gite with British flag that mean someone able to speak English...
