I notice that this is your first post, so welcome to the Forum :) . I've walked from Le Puy twice and, as you have worked out from your Topo guide, there are, as far as I remember, no really difficult parts from Cahors onwards - certainly nothing like the climb out of Monistrol...

I've walked the Le Puy route twice and it's beatiful but tough. I walked during April/May and that was a busy time in 2005. I heard somewhere that the GR65 wasn't too busy in August so starting mid to late August shouldn't be too bad for accommodation...
I would like to endorse Johnnie's view that pilgrimage is a spiritual process. Many people in the world are pilgrims but are not able to make a physical pilgrimage such as walking to Santiago. however in their everyday lives they have the pilgrim spirit of openess to others and to circumstances...
