Alternatively start in Burgos and walk beyond to Finesterra and Muxia.

I would also say SJPDP , walk your 26 day's and see where it gets you.
When you not reach Santiago come back an other time and walk where you finish now and walk till Finisterre and Muxia.

Jean Pied de Port, Prepare well and you'll get to Santiago, prepare less well and get to where your legs will allow and return another time.

Logrono or Burgos, depending on your pace and whether or not you want a day or two to hang around Santiago or even a day in Burgos.
Don't get caught up in the impression that one has to walk the CF from SJPdP. Yeah, that's great if one has time, but not everybody does.
Also I never tell anyone to walk part of the way from SJPdP to Santiago and then to go back and do the rest later. I never assume one has the time, finances or ability in any way to go back and finish it up.
Carpe Diem 100%. It's awesome walking into Santiago no matter where you started. You will see.
 
Most guide books recommend 34 days from SJPdP to Santiago. I suggest you get hold of one and look at the daily distances travelled. I found in 2014 that with a sore hip I was not able to keep to those schedules and ended up taking buses or trains some days. I walked 500km overall and this included the last section from Sarria, thus collecting my Compostela at the end. If you are not concerned about your Compostella at this stage then do what you can and come back another time to complete the journey. Buen Camino!
 
Thanks everyone for the opinions. We are starting at SJPDP and plan to walk all the Camino. I am fully aware that the 26 days allotted for our walk will be a challenge. A daunting task fore sure yet we are confident that we can accomplish the Camino, and yet there is and I am sure there will be unforeseen situations that will arise. The reason I ask ( and yes I do have a guide book) is to get some perspective from those who have already walked the Camino and possibly from those who started at different stages where they could have or wished they have started with a similar
