You have no need to book accommodation. The albergues will not accept bookingsYou just turn up and walking in May you should have no problems finding somewhere to stay.
Some people like the idea of staying in hotels and sending luggage in advance so they have to know where they will be staying, I think they are the minority, though I won't swear to that, certainly everyone I have met on the caminos has taken pot luck and gone to albergues.
It is a lot less hastle not having to be at a certain place every day but just walking in your comfort zone and taking it as it comes.
