We are planning to spend extra time in Santiago..

Any pilgrims out there who can recommend "must see or do" highlights???

A recent thread on this very topic has given some good suggestions, I think. Spending extra time in Santiago can be a real post-camino downer, but it is a gorgeous city and there is lots to see and do.

Go to the market where the local restaurants will cook the seafood you buy! A bit pricey but wonderful.

I loved the choo-choo train which gives you a tour of Santiago.

I love spending some days Post Camino in SdC.
All above mentioned ideas are great.
A visit to a smaller parish church is always wonderful...for instance the San Agustin.
Go to a nice cafe like Casino...read a book and see the world go by.
Go for tapas at Bispo or El Papatorio.
More substantial meals in Resto San Clemente.

I know about Bispo but not Casino or San Clemente. Where are they?

Cafe Casino (also called "The Bistro" on its windows) is on Rua do Vilar and is a former gentlemen's club. It is historic, beautiful, and spacious inside and is a great place to have a snack/drink and relax for a bit. I love it!

Also, taking a walk around Alameda park - right outside of old town - is another recommendation.
