Ideal pocket guides for during and after your Camino. Each weighs just 40g (1.4 oz).

I'm sure you will have a great time, 8 weeks is plenty long enough.
I always do a camino on a budget! I think that carrying a tent may be putting an unnecessary burden on yourselves. Are you planning to carry a stove as well? Generally staying in Albergues is not expensive and they have kitchens, staying in an Albergue and cooking for yourselves is likely to be more economical than camping, you also get somewhere to shower and wash your clothes :D
Not to mention the camaraderie of other pilgrims :)
There are plenty of shops on the Camino, check with your guide book and just make sure about the places you are staying, just a few require you to shop on the way. Beware Sundays, shops are closed as also Saturday afternoons very often, you have to think in advance. I always carry pasta and a packet of soup as emergency rations, the pasta bulks out the soup! Only the albergues in Galicia have poorly equiped kitchens.
Buen Camino
