Check out the info section on various Caminos on this site.
You got a lot of days, lucky man.
Starting with a slow pace from the Camino Aragones in Somport http://www.youtube.com/watch?v=wm4tOnJHm1I, or Roncesvalles http://www.youtube.com/watch?v=hR72E8tEI2c, may be viable options. Routes, climate, food, shelters, & infrastructures, are great. Once in Compostela, u may want to go on to Fisterra, a magic, restul way to end (or would it be continue :!: ) your Caminos.
