Pamplona Mythological Creatures?

Time of past OR future Camino
First one in 1977 by train. Many since then by foot. Next one ASAP.
An ALSA bus from Madrid Barajas delivered me to Pamplona (my favorite place on earth!) late on the afternoon of Saturday, October 14, 2023, to begin yet another Camino Adventure.... After checking into my hostal I strolled about a bit and in the Plaza del Castillo I discovered a noisy and crowded festival going on! It appeared to be some sort of celebration of local Basque/Navarrese goods and products.

There I encountered several enormous -- well, I don't quite know what to call them! -- "Mythological Creatures". These were NOT the traditional festival gigantes with which I am familiar.... I attach a photo for your consideration. Can anyone tell me what I was looking at?

What was the festival being celebrated?
 
The focus is on reducing the risk of failure through being well prepared. 2nd ed.
The first edition came out in 2003 and has become the go-to-guide for many pilgrims over the years. It is shipping with a Pilgrim Passport (Credential) from the cathedral in Santiago de Compostela.
