My Camino information tells me to stop at the Pilgrims' Office to have the start date on my passport stamped. I start in Tui. Does anyone know where that office is located?

You can get a stamp at the Cathedral in Tui or the tourist office.

Any albergue or restaurant will stamp your credencial in Tui. The Pilgrim Office info is for SJPP, although also there any albergue or restaurant would do.
 
The 9th edition the Lightfoot Guide will let you complete the journey your way.
Just to be clear....there is not a requirement to "check-in" with anyone on any of the Caminos. There are several "Pilgrim Offices" in several places...but they are not official in terms of any requirement. They have no official connection with each other..or with the Pilgrim Office (cathedral) in Santiago.
The recommendations for going to a pilgrim office is actually just to get any local information that may be available.
Stamps can be obtained anywhere.
 
I usually obtain a stamp on the inside front cover, to START my Camino, at the Cathedral, Church or Pilgrim Office located at my starting point. This Wednesday, that will be the Cathedral Se at Lisbon. Then, at Santiago, the Pilgrim Office affixes a Cathedral stamp to CLOSE that credencial, and Camino.

But, as said above, for purposes of documenting your Camino, to establish distance walked for the Compostela, any stamp from the first place you started is sufficient.

Many of the American Pilgrim groups now have a sello (stamp) which makes a very good first stamp.
I know that the Seattle chapter offers a very nice sello.
 
The 2024 Camino guides will be coming out little by little. Here is a collection of the ones that are out so far.
My wife and I got our first stamp in the St.
James Hospital in our home town.
They also have a pilgrim room.
